The production of Aszú wine (tears) is a meticulous process, requiring great patience and extensive knowledge. It is only possible in good vintages, when nature provides rain in late summer and a sunny, windy period in early autumn—essential conditions for the formation of noble grapes. The berries, swollen by the moisture, crack, Botrytis cinerea takes hold on their skins, and noble rot begins.
